Games that let you re-roll your character stats
Some of my fondest gaming has been games that allow you multiple rolls to try for the best possible stats during character creation, especially if they allow you to save your highest roll so far, so you know you can do no worse than that. OTOH I don't like it when they give you a set amount of points to distribute. Sometimes the re-rolling is more entertaining than the game itself. One that comes to mind is Icewind Dale. Can you name any others?

I think this was a thing in the Temple of Elemental Evil, as well. It's been a while, so I can't recall if it was strictly rolls or rolls+points.
I'm pretty sure I logged almost as many hours rolling and re-rolling characters (which you can save for use later) as I did playing the game.

Hahah soon as I saw this I thought Icewind Dale. The first time I played it took me over 6 hours to get my party just right.

The Wizardry games always had fun character design. I recall staying up late rolling characters again and again trying to get bishops, lords, ninjas, and samurai.
Not exactly on your main point, but one of my favorite games in terms of character design was always Darklands. You didn't roll stats, but rather selected a background and jobs that made up your characters history. Really a fun way to attach you more to your characters from the start.

If by "re-roll your character stats" you mean "jack everything up to as high as it will go", then the gold box games are it for sure.
Granted, they were difficult enough anyway even with a team of nietzh... niechz... nietchz... people with 18s in every stat and max hitpoints too.

I spent hours and hours re-rolling characters in Might and Magic 2.
