I think the latter. That he's saying that he only tipped at the end of the night, but accumulated the tips as he went along.

Most neighborhood bars I go (went?) to, when I sit at the bar, the bartender won't be presumptuous and collect tips as you drink. They don't even collect when you pay as you go. So you order a beer and set $20 on the bar. She comes back with a beer, takes the $20, leaves, say $17.50 on the bar. When I was a rookie drinker. I'd put $16 in my pocket and leave buckfiddy on the bar. The next drink I order, I put out a ten, she take $10.50 and brings me back $8. There is now $9 on the bar. I don't want reneg on my implied buckfiddy tip, so now I put $6 in my pocket and leave $3 on the bar. Somewhere in the evening the bartender chats me up and pours us shots or buys me a beer (this seems to be a pretty common "give away" bartenders get to build rapore) So by the end of a game I could be six beers and three shots in, two of which might be "free" so I might have $11 in tipped drinks and I another $5 where I show gratuity for my "free" drinks. So a typical night at the game would end the evening with $12 individual bills sitting on the bar for tip. On a truly stupid weekend night, that tip could be much larger with many more individual bills contributing to a very tall tower.

Heh, the first bar I started going to to sit at the bar and watch the game was called "The Dive". It had many tanks, including one with a small shark and one with snails. So maybe I should have said in escargot. The worst brutal evening at said bar ended with $60 tip, drink by drink and "free shot" by "free shot". Let's just say I was a little..."over served" that night, as in I had not been that drunk since I was teenager and will never be that drunk again. But I was still coordinated enough to build tower of tip that was nearly two feet tall.

Made me go look online to see what's up with my old bar and it's now got a 4th name since I used to go and all of the personality is gone. It looks like how I remember Buffalo Wild Wings looks like. Ah well. I'm old. And too old play townie at a bar anyway.

Nope jelly. Very thin no anything in it jelly. She cooked it and when it would slide off the spoon in sheets she jarred it and put it in a dark closet until set. She just didn't add pectin...only sugar and whatever pectin was naturally in the berries.
