There is a place by me that does and Italian casserole chicken parm. It's not exactly crispy, but it's really, really good.
Now I want chicken parm.
If you go through the trouble of breading it and frying it, you should minimize the sauce so that the fried breading doesn't become gummy when you bake it. I usually make extra sauce on the side for the pasta to go with the chicken.

That's the thing - it's not gummy. It's not cracker crisp, but it's got a good bite to it. No idea how they do it.

A propos of this, last night we watched Big Night (Stanley Tucci, Tony Shalhoub) with the kids. They like cooking and they loved it.

I don't care how seasoned the cookware or how short a period of time elapses, I would never make tomato sauce in cast iron.
That, and the Infantilization of food and cooking terms makes me want to punch a wall.

I remember liking that film less than I thought I would after hearing so much about it, but I think I still recorded it or bought a copy. Also: Tony Shaloub. I remember really wanting to eat the plain omelette from the next morning. A good omelette is amazing.
