I think he meant the Fi plan.
There is no roll over because you don't pay for any data you don't use (thus, nothing to roll over). If you use 6.62 GB, you pay $66.20 ($10/GB).

Which is why you'd want to limit that to being on the wifi with Fi. I am either at home (wifi) or at work (wifi) or at a relative's house (wifi) or at a local business (wifi) or driving (data for directions). Not much point for me to pay for data I wouldn't be using, so Fi makes a ton of sense for me.

I stream music while I work, and work does not provide WiFi for employees’ personal use.

It's also cheaper than your current plan for someone without your discount. So it would be better for him to say cell phone plans are expensive in general rather than Fi is expensive compared to other plans.

One thing to note is that each gig is usable among all your devices, unlike TMobile which charged me a separate fee for data on my IPad. Also tethering again uses the same data, no additional fee.
I'm home most of the time on my own wifi so fi saves me a ton of money. My most expensive month was $45, and most months are under $40.

My wife and I have been on Fi for a few years now, and it works great. I've always been on low-data plans ever since they stopped offering unlimited data, so I've gotten used to being a data sipper. I mostly listen to podcasts, and I've got Pocketcasts set up to automatically download episodes overnight. I've perpetually got 20-50 hours of podcasts locally to listen to. I also keep a few albums worth of music downloaded. Basically, the only data I use is maps and whatever web browsing I do. My wife's about the same. Our bills are consistently in the $25-30/month range, which is great.
I guess the question if you're a big mobile data user is do you do that out of necessity, or convenience? For me, it turned out to be pretty easy to switch to downloading over wifi and using less mobile data. It won't be for everyone, but the savings were worth it for me. Fi also does the calling over wifi thing, which is fantastic since my house gets a really weak cell signal. On Verizon, I couldn't make calls from my basement office, but on Fi, I totally can.
If anyone's thinking about signing up, I've got a referral link that'll get you some credit.

Sounds like I should save money with Google Fi... According to my data usage history per Verizon, I've not even broken the 8GB a month barrier yet.

Google has changed their pricing and data amounts for their Fi Unlimited and Unlimited+ plans. Our family of 4 was paying by the Gig and usually using between 1-2 GB/month total. For just the connections and data, it was averaging around $77/month before any addons (like device protection) or fees.
Under the new Unlimited plan, for 4 lines, each phone is $20 for a total of $80 and "unlimited" data up to 35 GB/month EACH (at which point it is slowed to a drip). Made switching a no-brainer as for ~$3/month more, we get seemingly infinite data. I'm hesitant to tell the kids as I've trained them well what uses data and what doesn't.

For us makes sense to stay on the old plan. $50 for 3 lines plus $10/GB. We do under 2.5GB/mo avg over last 12 months. So just under $75.
New plan would be $75 ($25 per phone w/ "unlimited" data).
If we start using more mobile data would be worth it. They don't say anything about data only sim cards, I have one on the drone phone.
Fun fact: For $73.72 billed last month, taxes and regulatory fees were an extra $27.95. That's 38%.
