Why was Leia called Princess
Leia's bloodline was a guarded secret, so why did everyone call her "Princess?"

I'll never understand their system of royalty.
Thank goodness they don't have reporters investigating scandalous things like a politician's mystery child.
Obi Wan kept one child a secret by having him raised in his hometown and keeping his last name. He kept the other a secret by giving her to a high-profile politician. And yet it worked.

Yeah. It always seemed odd that Darth Vader never once checked in on the Skywalkers of Tatooine to find that his stepbrother (Luke's Uncle Owen) had adopted a kid said to be his absent brother's.
Is there some canonical explanation?

Vader swore off everything he loved/cared about. He had no reason to suspect he had kids to look for. Palpatine told him Padme was dead. Pretty sure Palpatine would mention the babies survived though if he had known, so Vader thinks the babies died with Padme.
Having sworn off his old life, no reason to check on his step (half?) brother.
Having no reason to suspect he has children running around somewhere, not much reason to go looking for them.
And he was a little busy hunting down the jedi and taking on his new mantle.
Senator/Viceroy of Alderaan adopts a new baby out of the blue? Him and his wife had been wanting to have kids and a massive intergalactic war just ended - have to imagine there were a huge number of orphans and unwanted babies.
On the whole, this is not such a strange thing to me.

However... I have to wonder if maybe your not led by your own delusion that you yourself don't have kids out there, that you should be looking for.

She always was a high maintenance bitch, that's why. When I worked for Sara Lee, we referred to the CEOs admin as "Princess" because she got every toy her little heart desired...then was a rage-a-holic when it came to said toys actually working on our network. Which they usually didn't.
