Focaccia and thin crust are both good when done well. We had a place, (Papa Vino?) that did focaccia with an abnormally large crust that you would dip in this crushed garlic and oil that they put on the side. Soooo good.

We have a place called Cottage Inn, where they have a thin pizza with marinated chicken, peppercino, and feta cheese that is just amazing.

Man, I need a pizza.

Yes. They serve it at the water park, I've had tomato foccacia bread that's more pizza-like than their stuff.

I think I've mentioned this before (not that it matters - people believe what they want to believe about Chicago style pizzas, facts be damned :P ), but you don't actually need utensils to eat Chicago style deep dish. If made properly, the crust is more than sturdy enough to survive a trip from plate to mouth. We just happen to be civilized and don't need to eat everything with our hands!

So apparently I can make a pretty good representation of Applebees Veggie Patch Pizza with Green Giant Creamed Spinach if I do say so myself. I think I'll add garlic next time and replace the canned mushrooms with a fresh box. Overall it wasn't bad. Most of the recipes on youtube weren't as easy because they made their own creamed spinach and I'm lazy.

I only ever made creamed spinach once, en route to baked eggs Florentine. It took four pounds of spinach. Do you know how big a pile of raw spinach four pounds is?

Yeah, that huge 4-lb mound cooks down to half-fill a 2 quart baking dish. It looks pretty intimidating on the counter though, and just removing the stems takes a long time.

A new Chicago style pizza place opened near here called Rosati's. I have no idea if it is authentic or not, but at least they offer other types of pizza. That might be pizza blasphemy, but it seems like a better business model. The last Chicago style place closed because people here weren't used to waiting that long for pizza. I believe it was Gino's East.

The time I made creamed spinach I just used frozen spinach. As long as you give it a few weeks to defrost (how does it stay frozen for so long???), it works fine.

Rosati's is a chain that's mostly in the Chicago area, I believe, but has expanded here and there. It's OK - not the best or the worst. I don't know if I've ever had their deep dish.

I went to Chicago. I had pizza at Boni Vito
It had marinated beef and hot peppers on it, with a thin crust. Pretty dang good. Served with a local beer.

The only Monte Cristo I ever had was at Denny's, and I don't recall raspberries being a thing. Then again, Denny's motto is "It's Late!" and I probably had more than few too many when I ordered it.

On topic, though, Pequods was named one of the best in the country by some organization that presumes expertise in such a thing. I was only there once, with Brian, Lawbeef, Imlawboy, and child...they've been expanding and hope they someday soon set their sights westward.

I was hoping to revisit Pequod's on my return trip from Cancun since we had a five hour layover at Midway.

Unfortunately, as many are no doubt aware, Southwest has completely melted down and we ended up going through Denver instead.

So, sadly, another visit to Pequod's will just have to wait.
However, it seems you can order them online with overnight shipping so I may just have to do that.

Also, I've had one of their T-Shirts on my wishlist for a while but they are perpetually sold out. :(
